Small-Batch Carrot Jam with Cardamom

Small-Batch Carrot Jam with Cardamom

Fine shreds of carrot become glossy and tender in a lightly scented syrup. This small batch is designed for the refrigerator, not room-temperature preserving. Serve a spoonful with toast and plain yogurt, or add a few almond slivers at the table for contrast.

Method

  1. Soften the carrot

Put carrot and water in a saucepan. Cover and simmer for 10–15 minutes until the shreds soften. Add a splash of water if the pan dries before the carrot is tender.

  2. Add sugar and spice

Stir in sugar and cardamom pods. Simmer uncovered for 20–30 minutes, stirring occasionally, until the syrup thickens and coats the carrot. Keep the heat moderate so it does not scorch.

  3. Finish

Add lemon juice and cook for 2 minutes. Stir in rose water off the heat and remove the cardamom pods. The syrup should remain slightly looser while hot than you want after chilling.

  4. Cool and refrigerate

Transfer to clean heatproof containers, cool briefly and refrigerate promptly. Use within 1 week with a clean spoon, or freeze small portions. Add almond slivers only when serving.

Helpful tips

  • Grate the carrot evenly so all the shreds cook at the same rate.
  • Rose water varies in strength; start with less if yours is concentrated.

Frequently asked questions

Can I keep the jars in a cupboard?

No. This is a refrigerator recipe and has not been formulated for shelf-stable canning.

Why is the jam too thick?

Too much water may have evaporated. Warm a serving with a small spoonful of water to loosen it.
