Method
Mix while cold
Whisk the rice flour into 150 ml cold milk until completely smooth. Add the remaining milk and sugar. Starting cold is the easiest way to prevent flour lumps.
Thicken gently
Place over medium-low heat and stir continuously, including the corners of the pan. When small bubbles appear and the mixture coats a spoon, lower the heat and cook for another 3–5 minutes.
Add fragrance
Stir in rose water and cardamom. If using saffron, crush it and steep in 1 tablespoon hot water for 10 minutes, then mix with a few spoonfuls of the cooked pudding.
Portion and finish
Divide the plain pudding between four bowls and swirl in the saffron portion. Serve warm, or cool briefly and refrigerate. Add pistachio and optional almond slivers just before serving to preserve their crunch.
