Creamy Pistachio Milk with Honey and Cardamom


This simple pistachio drink uses milk, shelled pistachios and a little honey. It is lighter in texture than an ice-cream shake, with an optional touch of cardamom and rose water. A short refrigerated soak helps the nuts blend more smoothly.

Method
Shell and soak
Remove the hard shells before weighing 60 g of kernels. Cover the kernels with water and soak in the refrigerator for 1 hour, then drain and rinse.
Blend in two stages
Blend the drained kernels with 150 ml of the milk until very fine. Add the remaining milk, honey and optional cardamom, then blend again for about 1 minute.
Adjust the texture
Taste and add the optional rose water sparingly. For a smoother drink, pass through a fine strainer; leave unstrained for a thicker nutty texture.
Pour and finish
Pour into two chilled glasses and top with pistachio slivers. Serve immediately, stirring if the ground nuts settle.
Helpful tips
- Use unsalted pistachios. The green colour will vary naturally with the kernels.
- Do not add whole cardamom pods to the blender; use finely ground seeds.
- For a dessert shake, blend in one small scoop of vanilla ice cream and taste before adding honey.

Is this dairy-free?
The base recipe uses dairy milk. A plain plant-based drink can be substituted, although the flavour and texture will change.
